Creamy Rice Pudding with Mulling Spices

Yield: 6 servings.

2 cups water
1 sachet Mulling Spice Blend
1 cup uncooked medium-grain rice
2 cups 2% reduced-fat milk
1/3 cup sugar
1 tsp vanilla extract
1/8 tsp salt

Combine 2 cups water and sachet in a medium saucepan; bring to a simmer. Cook 5 mins. Dscard sachet. Stir in rice; bring to a boil. Cover, reduce heat, and simmer 15 mins. Add milk and sugar. Cook over medium heat 15 mins or until thick and rice is tender, stirring constantly. Remove from heat. Stir in vanilla and salt. Serve warm.
